Fresh Edamame

Season: Summer

Pair freshly boiled edamame with corn on the cob for a fresh bean and grain protein. Add a salad and you have dinner.

Ingredients:

1 1/2 cups fresh edamame beans
water
salt

Directions:

  1. Boil water in a medium sized sauce pan.
  2. Add edamame and boil 7 to 10 minutes.
  3. Drain and cool.
  4. Add salt to taste (choose rock salt instead of sea salt).
Preparation time: 15 minutes Serves: 2 - 4

Vatas: These beans may make you gassy.
Pittas: Great protein for you.
Kaphas: Eat them while they're still warm.
