Chevre-Dill Salad Dressing

Pitta: decreases
Kapha: decreases
Season: Summer

Enjoy a fresh salad every day of summer if you're not Vata imbalanced. Summer is the time of year to have lots of carbs and to enjoy what the earth has to offer. Cooling salads will counter balance the Pitta aggravation that can occur in summer. Enjoy with cool teas like mint tea.

Ingredients:

1 small head green lettuce
3 / 4 cup yellow cherry tomatoes
snap peas or other greens of the season
chopped broccoli
1/ 3 cup chevre
5 T olive oil
2 T fresh lemon juice
salt
pepper

Directions:

  1. Wash lettuce tomatoes and other greens.
  2. Mix olive oil, lemon juice, dill, salt and pepper to taste in food processor, add a little water if the dressing is too thick.
  3. Pour dressing over salad.
Preparation time: 10 minutes Serves: 4

For Individual Doshas (What's a Dosha?)

Vatas: Don't eat too much salad and skip the cold broccoli.
Pittas: Enjoy this with bitter greens and not much salt.
Kaphas: Add an astringent fruit like persimmon to the salad.
