Season: Summer

This classic summer soup is good occasionally on a hot day. Don't overdo tomatoes or garlic in the summer as these aggravate Pitta. Enjoy with bread and a sweet dessert like blueberry pie. Summer recipes are simple and easy and taste refreshing.

Ingredients:

1 medium clove garlic, minced

1 medium cucumber, peeled, seeded and minced

4 scallions

juice of 1 lemon

2 Tbs apple cider vinegar

handful fresh basil

handful fresh parsley

1 / 4 t cumin powder

3 T olive oil

2 cups freshly diced tomatoes

4 cups unsalted tomato juice

salt, black pepper and cayenne to taste


Directions:

  1. Add ingredients in order to a food processor except for tomatoes and tomato juice.

  2. In a large serving bowl mix the tomatoes with the rest of the ingredients. Add salt, pepper and cayenne to taste. Be careful not to overdo in the summer!

Preparation time: 15 minutes Serves: 5

For Individual Doshas (What's a Dosha?)

Vatas: Add more salt.
Pittas: Add some sweetness like watermelon.
Kaphas: Add black pepper.
